Castella Cake (Light and Fluffy Sweetness)
Ingredients:
- 4 large eggs, room temperature
- 1 cup granulated sugar
- 1 cup cake flour
- 1 tablespoon honey
- 2 tablespoons whole milk
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla extract
- Powdered sugar for dusting (optional)
Method:
1. Preheat the oven to 325°F (163°C). Grease and line a rectangular cake pan with parchment paper, leaving an overhang on two sides for easy removal.
2. In a bowl, sift cake flour to ensure a smooth texture.
3. In a separate bowl, beat eggs and sugar together with an electric mixer until pale and doubled in volume.
4. Gently fold in sifted cake flour, being careful not to deflate the mixture.
5. In a small saucepan, warm honey, milk, and vegetable oil over low heat until well combined. Add this mixture to the batter and fold gently.
6. Stir in vanilla extract, ensuring even distribution.
7. Pour the batter into the prepared cake pan, spreading it evenly.
8. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
9. Allow the Castella cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
10. Dust with powdered sugar before serving if desired.
