Chocolate chip muffins


 Chocolate chip muffins 

Ingredients:

2 cups of cake flour 

1 cup of white sugar 

1 cup of butter milk 

1/2 of vegetable oil 

1 cup of chocolate chips 

2 large eggs 

1/2 teaspoon of salt 

2 teaspoon of baking powder 

1/2 teaspoon of baking soda 

1 teaspoon of vanilla or caramel essence 

Method:

1. Preheat oven to 160 degrees Celsius 

2. Into a bowl, beat together sugar and eggs until creamy. 

3. Add vanilla essence, oil and salt then beat for few seconds. 

4. Add milk and beat for another few seconds 

5. Sift in flour, baking powder and baking soda then mix using a spatula until everything is incorporated. 

6. Lastly fold in chocolate chips, do not over mix the batter 

7. transfer the batter into lined muffin pan using ice cream scoop. Top the muffins with chocolate chips. 

8. Bake for 30 to 35 minutes or until a toothpick comes out clean. 


Note:

Use room temperature ingredients ( milk and eggs)
