Vegetable Soup


 Vegetable Soup

Ingredients:

1 medium onion, chopped 

60 g butter (62,5 ml)

50 ml diced carrots

50 ml chopped celery

1 large potato, diced

1 medium turnip, diced

3 medium tomatoes, skinned and diced

2L water 

10 ml salt

1 ml pepper

12,5 ml finely chopped parsley


Method:

1. Sauté the onion lightly in the butter, add the rest of the vegetables, except the tomato and parsley, and sauté for a further 10 minutes.

2. Add the tomato and water, and simmer until tender.

Add water if it boils away.

3. Add the salt, pepper and parsley. Bring to the boil and serve hot.
